
Tomato Walnut & Blue Cheese Salad
Ingredients
Salad:
1 small handful baby kale
1 small handful baby spinach
1 small handful cherry tomatoes, quartered
1 small handful walnut pieces, optionally toasted
Blue cheese crumbles, as desired
½ rotisserie chicken breast, cubed (or sirloin steak)
Dressing:
1 tbsp olive oil
juice of ½ lemon
salt and freshly ground black pepper, to taste
Steps
Mix together 1 tbsp olive oil, juice of ½ lemon, salt, and pepper in a small jar.
Toss the baby kale and spinach with the dressing until evenly coated.
Top with rotisserie chicken, cherry tomatoes, walnuts, and blue cheese.
