Heirloom Goat Pizza

Ingredients

22 oz pizza dough (Whole Foods)
1 tbsp olive oil
2 garlic cloves, minced
6 oz mozzarella, shredded
1/2 pint heirloom cherry tomatoes, halved
4 oz goat cheese, crumbled
Small handful fresh basil leaves, torn

Steps

Preheat the oven to 450°F. Lightly oil your Silpat, then shape 22 oz of dough with your fists and place it on the mat. Continue shaping by gently stretching the dough to the edges. The dough is easiest to shape cold, so don't remove it from the fridge until you're ready to work with it.

Brush the dough with 1 tbsp olive oil and add 2 minced garlic cloves evenly over the top.

Add 6 oz mozzarella, then ½ pint of halved heirloom cherry tomatoes. Crumble 4 oz goat cheese on top.

Bake for 15–18 minutes, until the crust is golden and the cheese is bubbling.

Remove the pizza from the oven and top with torn fresh basil while it's still hot.
